Because there is an abundance of zucchini everywhere right now and because nothing is more comforting than a warm, sweet loaf of zucchini bread, I give you my zucchini bread recipe:
Here's what you'll need:
1 1/2 cups of all-purpose flour
3/4 cup sugar
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1 to 2 teaspoons cinnamon (according to your taste)
1/2 cup chopped walnuts
2 large eggs
1 1/2 to 2 cups of shredded zucchini (I use 2 cups)
1/3 cup vegetable oil
1/2 teaspoon orange peel zest

Here's what you'll do:
Preheat oven to 350 degrees
Grease loaf pan
In a large bowl, stir together flour, sugar, baking powder, salt, cinnamon and walnuts.
In a medium bowl, with a whisk or fork, mix eggs, oil, zucchini, and orange peel. Mix until flour is moistened.
Pour batter into prepared loaf pan. Bake 1 hour 10 minutes, or until an inserted toothpick comes out clean.
Cool loaf on wire rack for 10 minutes; remove from pan and serve. Makes 1 loaf.
