Tangy Potato Salad | Instant Pot Pressure Cooker

 
 
Can you believe it's already September?
This year has flown by.
 
 In honor of the Labor Day weekend, I'm sharing my Tangy Potato Salad recipe adapted for the Instant Pot.

3 large potatoes, peeled and cubed
4 eggs
1 small onion, chopped
3/4 cup mayo (I prefer Miracle Whip)
1/3 cup sweet pickle relish
1/4 cup yellow mustard
1/4 cup cooked bacon, crumbled
Salt & Pepper to taste
Paprika for garnish


Add one cup of water to Instant Pot and place steamer basket inside Instant Pot.
Add cubed potatoes to steamer basket, then place four uncooked eggs on top of potatoes.
Lock on lid, turn steam handle to sealing.  Set to manual mode for 6 minutes.  After finished, natural release pressure for 6 minutes.  Remove eggs and place them into an ice water bath.  With a large spoon, dip out potatoes into a mixing bowl; let cool.
Remove the shell from hard boiled eggs, add them to the potatoes and give them a quick chop-up with a fork.  Add onions, mayo, pickle relish, mustard and bacon, salt and pepper to taste; mix well.
Transfer to serving dish and garnish with paprika.

Fast And Easy No Knead Homemade Crusty Bread Recipe


Imagine baking a delicious and easy homemade bread that will have your family oohing and ahhing when they see you coming with this beauty.
 If they like big chunky, crusty bread - that is exactly what will happen, trust me!

Today, I'm sharing my bread recipe that I've adapted from my easy 30 Minute Yeast Roll recipe, which I'll share with you another time.





 

Here's what you'll need:

1 cup plus 2 Tbsp warm water
1/3 cup oil
2 Tbsp active yeast
1/4 cup sugar
1/2 tsp salt
1 egg
3 1/2 cups flour (I use bread flour)

Here's what you'll do:

  • Preheat oven to 425 degrees.
  • In the bowl of your stand mixer, combine water, oil, yeast and sugar.  Allow this mixture to rest for 15 minutes.
  • With a dough hook, mix in salt, flour and egg until combined.  Dough will be sticky.
  • Line Dutch Oven with foil or parchment paper.  Spray foil with cooking spray.  Place dough into Dutch Oven, let dough rest for 10-15 minutes.
  • (Optional - drizzle top with olive oil then sprinkle with rosemary or any herbs you may want to add)
    • Cover Dutch Oven with lid, place in preheated oven.  Bake for 30 minutes.  Remove from oven, remove lid and bake for another 10 minutes until bread is as crusty as you want it to be.
    This bread is a thick and heavy bread - perfect for dipping in sauce.

    Tidying Up

    How is it May 2016 already?  It feels like this someone pressed the fast-forward button on this year.
    As always, things are changing and rearranging in my life. I suppose most people would be able to make that statement truthfully for their own lives. Right?  Change is hard for me, I don't know why, but it is -especially as I get older.  When I was younger, I adapted easily.  Not so much now. 
    I always tend to go into shut down mode when things (big life things) happen these days.
    And so, a new chapter begins in the ever-evolving book of my life.  That sounds corny, doesn't it?

    I've spent the last couple hours creating a new header and buttons for my little space.  I'm trying to do a little tidying up here, because I'm hoping to move back in permanently very soon!

    New Year - 2016

    Goodbye 2015, Hello 2016.
     
    There has been so many changes over the past year that have kept me busy beyond belief.

    First of all, I had to go back out to the workforce world.  Not that I didn't work at home, because I did.  Between my craft & soap business, setting up and taking down the 'pop-up-shop' at all the numerous craft fairs and festivals all year, homesteading and taking good care of my family - I stayed very busy.
    Financially, I had to do it.  My husband's job became so unreliable, I really had no other choice.
    So in the beginning of 2015, I went back to work.
    I have wanted to come back to my little space here so badly.  I enjoyed it more than I realized.  But that has not been possible.  The truth is, most of the time when I get home from work, I am done for.  I think a combination of my age, not to mention the fact that I have a terminal lung disease, and numerous other things like my laptop working only sometimes, hasn't been conducive of any photos or posts.  I do keep up on Instagram though.  It doesn't require a computer or much work, and I've made some good girl-friends on there that I enjoy talking to. 



    Here I am today, squeezing in this time on my day off, when I really should be doing laundry or something.  Because heaven knows, I have laundry piled up and strewn around everywhere.  No joke. 
    And if you know me in real life, you'd know that I don't roll like that - at all.  I do not function well in chaos and when my house is wrecked, yet somehow, I've been doing just that.  Weird.  I blame it on being too tired to care. :)



    Christmas came and went, and to be honest, I was so very glad.  The blahs hit me hard this year.  Very hard.  I am thinking about sharing about it here, because if it could help one person out there who may be feeling the blahs too, well, then it would be worth opening myself up and exposing all that stuff.

    (Isn't this mountain stream magical?  We found it on a Christmas day hike that my Hunny and I took.  I hope to go back in the spring with tripod in hand next time!)
    I am on the up side of this year's blahs.  But there is one thing for certain.  I will order a new SAD light before next September, and I will use that thing all fall and winter long.  #SeasonalAffectiveDisorder
